Breakfast Ham and Egg Cups

This is my go to breakfast on the weekend, especially if we have guests. They are so simple and easy to make and if you have a large muffin tin you can make plenty to go around without hardly any extra work! Last year I made these on a ski trip for our cabin of 10+ people, they were easy enough to make after a night of a few to many drinks and everybody loved them! I like to make these ham egg cups into small breakfast sandwiches using toasted English muffins and adding a slice of American cheese! Total cooking time is approx. 12-18 min depending on how runny you like your eggs… I love to have my yolk runny but it does make them quite messy!

  1. Preheat oven to 350 degrees F
  2. Press a slice of ham into each cup of the muffin tin (you can do the entire try or just as many as you need.)
  3. Gently crack an egg into each ham lined cup.
  4. Place try in oven for approx. 15 min. (You can check on them thought the cooking process, you want them just done enough so that the egg white is not runny, leave in longer of you would like your yolk cooked thorough)

Once they are done in the oven you can eat as is or create a sandwich with a slice of American cheese and a toasted English muffin. Bon appetit!
